Freezing Cheese

Have you ever tried freexing cheese before, for storage?
My mom likesto buy the bulk cuts of cheese because its quite a bit cheaper than all the other cheeses (at out local grocery store). We always cut the block into halves or thirds, keep on piece in the fridge and freeze the rest.
I've come to notice that the cheese that was frozen tastes fine, but is extremely hard to grate- it always crumbles up.
We seal the cheese we freeze in doubled ziploc bags, and defrost them overnight in the fridge, but the crumbling always happens.
Has this ever happened to you? or do you know why it happens? :o

I normally only freeze already shredded cheese, so I don't have that issue. My sister freezes he blocks of cheese though and she has commented on how it crumbles when it is thawed out. I did not know if it was all cheese or just the cheap brand that she buys.

I have frozen blocks of cheese but found it crumbled so I stopped doing that. I buy shredded cheese and keep it in the freezer all the time. It's always great to have shredded cheese on hand for some dishes or even sandwiches. It would be nice to be able to get a huge chunk of cheese on sale and save it in the freezer but it does seem to crumble. Not sure why.

yup, the best things not to freeze it as you see even in supermarket malls they never freeze the cheese as it is already fermented though nothing to worry it get stale.
