Pumpkin-tastic!

My neighbours have very kindly given me three large pumpkins which I´m very pleased about. But they´re huge! I need some help with ideas of how to use them up please. I wonder if anyone has a favourite pumpkin meal idea they´d care to share with me? I made some pumpkin and orange marmalade yesterday which is divine, but unfortunately I´ve now used up all my jars. I also wondered about dehydrating it. I figured it would come out chewy, a little like apple. Has anyone had any success with that before?

Just take the word pumppkin and put a plate name after. Like pumpkin pie, pumpkin cookes, pumpkin pasta or whatever.. Get creative! Then go sell your cookies at a fair and make some money. Or take them to a nursing home or old folks home or something like that, do something good for the community!

I have difficulty getting anyone in my village to accept any cakes or biscuits! They´re all elderly and not allowed to eat sweet things! Of course, there´s not too many biscuits and cakes every available to LEAVE this house in the first place but thankfully my jams last a little longer.

You can make pies and share them with your neighbors! You can also freeze one or two pies for later. Pumpkin cookies are delicious, especially when you add currants or raisins. Cooked pumpkin is good to add to beef stew or any type of stew. Pumpkin bread, of course, and that's yummy when you have some nuts to put into it. I had some pumpkin/zucchini bread once and it was delicious! Then again, you can always cook it up and freeze it in small batches and make those breads, cookies and pies later.

I forgot to add one thing--if one of your animals ever has blood in their stool, it might be from constipation. My dog Gus had that problem and after $300 the vet couldn't find the problem. My neighbor's dad (in his 80's) said that they used to feed the animals pumpkin when that happened and it fixed it right up. And it did! It's great for animals and keeps them regular, just a tablespoon or so every day in their food.

Hmmmm ... I´ve not tried pumpkin cookies before. That sounds like a lovely idea. I wish I could freeze it and use later, but my freezers are filled to bursting point and I´m trying to empty them out as I won´t be able to use them when I finally move to the farm. There´s no wild hurry though to use up the pumpkins providing I don´t cut them. They keep for months, though they´ll be nearing the end of their lives now (which is probably why my neighbours gave them to me!).

Oh pumpkins! yum! You should definitely try making pumpkin flans! They'd be more nutritious and yummy than plan leche flans :) Have fun with your pumpkins :)

I'm guessing it's still cold in the UK so I'd suggest that you make heaps of pumpkin soup! It's my favourite soup and can be frozen. It depends on how much freezer space you have but I'd say the best thing to do would be to cook and freeze the pumpkin for later use. It would be shame for any of it to go to waste or for you to get sick of it because you have so much at once! If you really don't have the freezer space and need to do something with the pumpkin now, then I would buy more jars and make some more marmalade. Perhaps decorate them and give them as Easter gifts.

Ooooh, pumpkin soup flavoured with curry. Yum! Excellent idea for using the pumpkin marmalade for Easter gifts. I hate buying jams and normally recycle empties, but for gifts I guess buying some wouldn´t be so bad. Thanks for a great idea!

Dehydrating it would be a long process because pumpkins have such a huge amount of water in them. I love Pumpkin Butter. I use it on my morning toast and it's like having a piece of pumpkin pie for breakfast. Also, you can cook down the pumpkin and freeze it for later. Just make sure that you squeeze all the air out of the bag (if you use a bag to store it in your freezer) I've frozen pumpkin and used it several months later. You can also do it with pumpkin bread, cookies etc. Like I say, before freezing if you bag the stuff make sure you get the air out because that's what encourages the moisture to crystallize and cause the freezer burn.

I have an electric dehydrator which I use for apples. I imagine pumpkin has a similar liquid content to apple. Thanks for the freezing tip, though I´m trying to empty my freezer out just now prior to moving.

As others have said, I would bake them up and freeze them for future use! You can even puree them and freeze them up in freezer bags in portions that you would use. We love pumpkin everything . . . pumpkin cake, pumpkin muffins, pumpkin pancakes, pumpkin cookies, pumpkin soup . . . oh and I'll even dump some in spaghetti sauce for my daughter so she gets that extra vitamin A (it doesn't change the taste of the spaghetti as long as you don't put tons of it in there). If you have any kids, you can do a jack-o-lantern project - even if it's not Halloween season and without Halloween images - something fun to put at the door. Plus as it rots, it can be a good science lesson.

One of my favorite ways to use pumpkin is to chunk it up, cook in a little water, then mash and season like mashed potatoes. It makes a good soup, too, with garlic, onion, butter and spinach. You can dehydrate it to make pumpkin chips. Slice, salt lightly and dehydrate. It's a good snack.

Ah-ha! A recommendation for dehydrated pumpkin. I´ve been dying to try it but my dehydrator is large and I didn´t want to do a big batch and find out it was dreadful!

There is always pumpkin pie or pumpkin cheesecake. Look online for some wonderful pumpkin recipes. The internet is always my first source for recipes these days. I hardly ever look in traditional cookbooks anymore, if I do, it's usually just to see cool food pictures.

hi greenmoo You can cook pumpkin and then freeze it, and use later for pies, cookies, in beef stew and as a vegetable which is really yummy cooked and ate like yams or sweet potatoes.As a veggie it has a lot of nutrition in it so has some real health benefits too. the stew with pumpkin is also very yummy too.

I do like pumpkin cooked down and included with other veg in a stew or similar, I´m just reeling at the quantity I have to deal with! They will last a few weeks longer I guess, so I needn´t worry unduly, but it´s nice to have some new ideas.

Hi, GreenMoo. You can make a pumpkin pie out of it. And you can, use the filling to make cream filled desserts. That is very nice of your neighbors to give you three large pumpkins.

pumpkins, good, eyesight - pumpkin, yummy, candy
Pumpkin can be made as jam . It is delcious and full of vitamins that helps eyesight clear vision. You can make it also a pumpkin flavor cake . A substitute of carrots cause that is already there. You can make a candy out of it too. So try that one and I'm sure you like to eat it. It is good to eat if we are the one doing it.

My pumpkin and orange marmalade has been delicious, so I think I´ll take a look for more jam recipes.
