Spanish Rice

I just love the Spanish rice a while back I started a discussion on if anyone knows how to make this rice and I don't think I got any responses so I would like to try again, every time I have tried to make this rice just as they would prepare it at a local restraunt I can never seem to get it right does any one know how to make this?

In a large skillet, brown 2 cups of long grain rice with 2 tablespoons of olive oil. Use medium heat. Add garlic, onions, oregano, a pinch of salt to taste, curry powder and 1 can of tomato sauce. Keep stirring these for about 5 minutes.
In a separate pan, put 3 cups of chicken stock and let it simmer. Add the rice mixture from the skillet and stir. Cover it and let it cook in low heat for about 20 minutes. Turn off the heat and let it stand for at least 5 minutes to set. Serve hot with whatever else you have (taco, enchilada, steak, carnitas) and enjoy. Spanish rice is really yummy. The thought of it is making me hungry, lol.

my grandmother was the one who really great in cooking and i know, if i my memory is still great, she cooks spanish rice when there are fiestas in the place. but sorry, i cannot tell you how to cook it, i also have no idea how grandmom made it.
