Mango Pickles. Anyone?

Summer is Mango season in the Philippines, especially in April and May. Ripe, sweet, and plump mangoes litter sidewalks of every city, coloring the surroundings bright yellow. This is also the time to make mango pickles. This is good as a side dish for fried meats or fish. And the vinegary sauce makes for a superb dip for the same. The Pinoy style of eating meals with mango pickles is placing 2 or 3 preserved mango slices and some sauce on a saucer, eat with bare hands, dip fried fish or meat into the pickle sauce, cover it with rice, and eat. From time to time, you also munch the mango slices. It's easy to make a jar of mango pickles. Buy raw, green mangoes. Wash and slice them. Put everything in a glass jar. Fill with water and some salt to taste. Store for 3 to 4 days in a cool, dry place. Then it's ready to serve!

my maternal grandmother used to make jars and jars of pickled mangoes. if i remember correctly, there is a particular type of mango that is ideal for this one. i remember when i was younger, i would grab a slice or two eventhough the pickled mangoes are not yet ready. my grandmother will would be mad but would let me off easily. lol! looking forward to making pickled mangoes myself. not sure if its going to taste as good as the pickled mangoes of my grandmother but it will sure be worth the try.

You're right, Allen! We call it "Piko" mangoes. These are characterized by their long bodies and pronounced pointed ends. But all mango varieties are good enough---"kalabaw," Indian mango, and "pahutan"--mini-mangoes in Cavite, south of Luzon, Philippines. I wish to get a taste of your pickled mangoes! Lol!

exactly, 'piko' mangoes are the best ones to be pickled. the mini mangoes i've ate but not the pickled variety. i've had 'pahutan' together with tomatoes, onions, lots of chili pepper, and fish paste.

I particularly like the pickled green mangoes. It goes well with sauteed shrimp paste. Talk about appetizers!

not tried this or tsted one. We make it differently. The green mangoes sliced then mix it with hipon ( small shrimps cured with salt). We also eat this with rice. Good appetizer! mmmmhhh... i am hungry.
