I sometimes make a simple loaf with sausage meat and pack the middle all along with hard boiled eggs so they come out like Grovesnor pie when you cut in.
That is quite nice if you let it go cold and have it with a salad.

Scallions/celery, onions and your favorite herbs also make good meatloaf stuffing. Speaking of hard-boiled eggs, my mother used to make embotido when I was young. Embotido is a meatloaf dish made out of ground pork stuffed with carrots, green onions, raisins and hard-boiled eggs, wrapped in banana leaves and steamed until done. Embotido freezes well and we usually slice them up and fry them for breakfast.

sounds lovely.
I cant imagine what raisins and hard boiled eggs in the same dish would be like but its something new to try.

I have meat loafs in can only and I have never experienced making it on my own. I think I will check something about this later. I like food
