Drying vegetables

Has anyone ever dried vegetables? I'd like to make a soup mixture and not sure where to start. Thank you

No I havent. My toaster oven has a dehydration feature but I don't know what happened to the manual so I was thinking of trying it out when I have an abundance of some produce to attempt to dry out & see how it goes.

Thank you Maybe we can learn together. All i've dried is mint for room freshener, but hope to save space with the drying.

Most of the time we just buy fresh vegetables. Vegetables play the main role in our diet. As to dried vegetables, sometimes we just use it to make the soup. I love China

Thank you I thought I'd dry them myself to help with storage issues, but sure how.
