Drying produce

I was thinking of drying some of my items for soup. Have you ever saved your garden surplus this way?

The first year I planted stuff all I got was onions. I gave them to my neighbors, because I don't care for onions. (Don't ask me why I planted them.) Last year, I only planted tomatoes...and I ate everyone the squirrels didn't eat. This year, I plan to have so many vegetables and herbs that I do plan on drying, pickeling and canning some. We'll see how well it goes. I have a de-hydrator and that's what I'm planning on using. Don't know if it'll work, but I'm going to try it nevertheless, especially on my herbs (cilantro, basil, rosemary, etc.).

Thank you for responding. Maybe we can learn together. My mint, I dried and it worked okay for a room freshener. I have looked on net and they say to blanch most things first. So thought i'd try. Good luck and hope to hear from you soon.

How did you dry yours? Did you use a de-hydrator or just let it sit out to dry? I'll check out the blanching... Forgot all about the internet :}

Thank you for the BR. I've been harvesting the herbs (cilantro, parsley, oregano, basil and rosemary) and if I'm not using them fresh, I've been freezing them. I decided to do that rather than dry them with the dehydrator. It seems to be working pretty good. How's yours coming?
