Tonight I made a big pot of spicy black bean soup. A lot of recipes call for bacon, but I decided to try "Hickory Liquid Smoke" instead (Colgin brand). I had my reservations about the product, but.. wow! Amazing flavor. It adds a barbeque/smokey flavor that doesn't taste "fake" at all - I guess it's made from real hickory concentrate? It comes in a small bottle and I put in about 2 teaspoons for a pot of soup (6-8 servings). I can't wait to start using this product on all types of things - marinades, sauces, dressings, dips... I bet it's especially good as a marinade for salmon. Also adding it to roasted potatoes sounds great too. Mmm getting hungry just thinking about it! The bottle says it's concentrated, so you only need to use a little bit, and the bottle cost under $5. Have any of you used Liquid Smoke before? What have you put it on?

We use the Hickory Liquid Smoke all of the time. We put it in Carolina Style BBQ. My uncle calls it his secret ingredient because of the flavor it gives. It does sound good on roasted potatoes also. Maybe I will cook up some potatoes the next time we have BBQ and I will tell my uncle that I stole his secret ingredient.

I like the roasted potato idea.
