Which do you prefer? I love eggs in different ways. And when someone comes without telling beforehand, I can always make an omelette, a fritatta or a Spanish tortilla. Everyone loves them and it is filling. Besides, they are very unexpensive and you can serve something beautiful without getting out of your budget. Do you make them? Which of them do you prefer? What is your favorite recipe? Share!

My speciality is frittata! I don't like omelette so I never ever do them. There are no end of frittata recipes that I make though. Some are plain with just mixed herbs right through to pancetta (bacon) diced up and added with parmesan chees too. Ever done a plain frittata like this? Let ir cool and then line it with a mixture of mashed potatoes and tinned tuna and seasoning then roll it up like a swiss roll. Wrap it in tin foil and put it in the fridge. When cool cut into slices and serve with salad. Great for picnics!

There are so eay, quick and nutricious too. Unexpected guests and I often make one. It seems to go well with just about anything else too amd there really is no end to what you can add to them, even the leftovers from previous meals PA just how many will you be bringing when you arrive? I have lost count now

I haven´t done that one but I´ll try it Diana. Sounds delicious. That is, the wrapped one. I´ve done the plain one. It´s easy and yummy. I love to add zuchinni to the fritattas also. It´s the only way my grandsons will eat them. They still in the no veggies stage.

I have had omelets and I love them, but I am not sure whether or not I have had the other two. They sound good, though, and I generally enjoy trying new types of food, so if you are volunteering to do the cooking, then I will be there ... of course I might be followed by a few friends, so you had better make extras just in case!

I am not sure. I think that you had better make all three so that I can taste-test them and give a well documented and informed opinion on the subject.

Brilliant idea, Topffer! And as this other myLotter named Richnai has been raving about the food that he cooks each day, I suggest that he bring some by as well, and then we can have taste-testing party.

As they are inexpensive, I will join the taste-test. She will have at least an independent opinion .

You can make a lot of egg dishes with just the egg white, Jo. If you have a teflon skillet, you beat the whites, throw in whatever you want (string beans, fried onions, diced cheese, chives, raw grated carrots and so on) heat skillet medium and there you go. I just fold it when it sets. If it´s not that beautiful, I fold it again. And if it is still ugly, at least it´s yummy.

If you can´t use the yolks for health reasons, you have to throw them. Or you can give them to someone who doesn´t have the proplem. I love the yolks as you do. And many times I many my own mayo, just like our mothers did.

My mother makes a mean frittata, it’s absolutely beautiful but then again she is an excellent Italian cook. Omelettes were the only thing I knew how to make when I first left home; it was quite amusing because we were eating cheese omelettes, beans omelettes, bacon omelettes, ham omelettes...you name it, it was in an omelette; the only thing that changed was the filling! We were sick of eggs for a while but these days I still make them just not so often, they are a lovely healthy and filling meal and you can be creative with the fillings. Yum!

I make omelets with cheese, or potatoes, or with garlic, tomatoes and onions. In the recent years, tuna had been a fad, so sometimes, I make tuna omelet. With fritattas and tortillas, there are many that come in packed boxes at the grocery. But we sometimes eat these with salsa or some cream.

I don´t know if we don´t have as make packaged food in my country or I just skip that aisle in the supermarket. I like fresh products and my fritattas are made from scratch.

Children love eggs. I remember that when my eldest grandson was very little I used to make him an omelette with chives and diced cheese. He gobbled it.

i prefer omelette or sunny-side up during breakfast. that is to make an easy preparation for myself or the kids. talking about eggs and omelettes, this lunch time, my wife prepared an eggplant omelette which the kids also love.

I think I would prefer a tortilla because I love Mexican food. I don't think I've ever eaten a fritatta. I ate an omelette one time when the Omelette Shop first came to town and I didn't like it too much. The Waffle House came to town about the same time and I tried them. I prefer waffles anytime to omelettes.

Oh, I didn't know this. I didn't know that there was a spanish tortilla as well as a mexican tortilla.

I was thinking more about the spanish tortilla. Mexican tortillas don´t have beaten eggs as spanish tortillas, fritattas and omelettes have.
