I eat a vegan diet. My favorite meal would be salad with a dressing and a bowl of pasta. I like to have a glass of fruit juice. In a salad I enjoy eating cucumber, lettuce, spring onion and cress. Sometimes I like a salad with cauliflower, carrot and red cabbage. I eat a salad dressing which is vegan. Many salad dressings contain egg which is not suitable for vegans. It is lovely to add some nuts to a salad. Salad is low in calories and healthy. We are told it is best to eat five portions of vegetables and fruit per day. Salad is full of vegetables. For pudding a bowl of strawberries and raspberries is an excellent combination.

You don't have to eat salads. Instead, have carrot sticks, celery sticks, raw broccoli or cauliflower, green onions, or whatever raw vegetable you like. Salads can be bland, but don't have to be. Use red cabbage, arugula, horseradish... whatever you like on/with them. Raw vegetables have vitamins and minerals that our bodies need which are hard to get otherwise.
