potatoes and squash

I came up with my own recipe with yellow squash and potatoes. I am sure it's not really too original though. A few years ago someone kept giving me yellow squash and I had to figure out a good way to use it without getting tired of it! I decided to try to fry it with potatoes. I fried them up with some onions then melted some cheese on top. It was good, but something was missing.. so I added some green Tabasco to it. Whalah! It was perfect! I make it on purpose now! What's your favorite food creation?

I have never tried them this way. When the garden gets going they are hard to keep up with. We usually slice quite thin, roll in flour and fry till brown on both sides. My DIL said no to squash until she tasted them. Now she makes them for her family.

That sounds like an interesting recipe. I usually just sautee my fresh squash in a little dab of bacon grease adding water and a few onions. I season with black pepper and that's it. Quick and easy and you still have the wonderful flavor of fresh squash. I could never get away with putting tabasco on it here, my husband has acid reflux pretty bad. Thanks for sharing the way you cook fresh squash!
