What to make for dinner?

My husband starting working different hours and now will be home in time to have a real family dinner. Problem is I cannot think of new dishes to make every night. I like simple dishes that do not have to many ingredients, economical and makes a lot.
So my lotters, give me some of your favorite things to make for dinner, thanks.

Here are some quick tips: chili my boyfriend and I love to make lots of it. first day we eat it alone, second day I like to have white rice with it. Then any leftover I like to freeze then a week or so I like to bake potatoes in the microwave and stuff them with the chili.
Spaghetti, boil it. Then on the side saute some onions, pour in the spaghetti sauce then pt on top of spaghetti.
Buy some frozen mixed oriental vegetables, saute them in olive oil then place on top of cooked spaghetti and or bow tie pasta. Yum. My boyfriend loves this.
Last of not least. Salads in this hat weather are great, load them with chunks of meat and you have a filling hearty salad.

My hubby was laid off for awhile and then he went back to work to where he was home for dinner as well. So here is some solutions for you that worked for me.
Gulosh(noodles,onions,tomato sauce,and brown hamburger all in one pot)
Different flavors of Hamburger helper(My favorite is Philly Steak)
Soup Beans and Fried potatoes
