My kids come over on Friday nights. They are watching what they are eating, I think they are pretty much following the South Beach diet. Anyway we usually have chicken and some veggies. But last night we opted for a good ole taco salad. We used low fat cheese, sour cream and turkey instead of beef. The dressing was also reduced fat. I couldn't find the multigrain chips though so that part wasn't good for us. I just put less in than I usually would have! It was so good to have an old favorite! Do you have an old favorite that you bring back every so often?

So far they seem to like it pretty well. They've both lost around 10 to 15 pounds and feel lots better too!

Maybe just add a little bit of weight training. Or if that's what you are already doing, add some aerobics!

It's really good and very easy to make. Especially now that you can buy lettuce already chopped up! lol!

I love taco salad! Every time I make taco's for the kids I end up making myself a taco salad instead. One thing that I grew up loving was my mom's hamburger casserole. I will make that once in awhile because I can remember having it as a kid and remember how much I loved it.

I don't remember hamburger casserole, but my mom made hamburger pie. The meat was the crust then she filled it with mashed potatoes and melted cheese on top! mm. good stuff!!

Yum! You have reminded me of a really good salad that I forgot to list when mylotters ask for salad recipes. I made a taco salad not too long ago and just omitted the meat. It was just as delicious with beans, and the usual cheese and other ingredients. I did not go low fat though. I used regular ranch dressing and a brand of natural salsa that I really like. It was light and just right.
