I found a recipe not too long ago on the back of the Hormel tamales can. Hubby and I tried it and it is really quite good. All you do to make it is empty two cans of chili beans into a large baking dish. Lay the tamales over top of the chili then top with monterey jack and cheddar or taco cheese. Put it in the oven and bake at 350 for 30 minutes. I tried this again tonight but made my own chili beans and it was more like a tamale soup that is why I suggested using the canned chili beans. It was still good. I just chopped up the tamales and mixed them in with my chili.

That sounds delicious. My family and I usually make enchilada casserole. My favorite type of food is Mexican. How about you? Or is this your first time trying it?

We have had it twice, the first time we used canned chili beans. The second time we made homemade chili beans and they were more like chili soup but it was good both ways. I have never had enchilada casserole but I bet that would be good too.

I liked your idea although I will try it with my own beans first. But with your experience, I will take out part of the water I use to cook the beans. I do´t cook them in too much water though as I use a pressure cooker. The liquid will do to Lola, my German Shepherd. Nothig is lost here
