why are ships launched with a champagne bottle?

we often see ships being broken with champagne bottle during their maiden voyage.I wonder how this started.

I expect it has it's origins as an offering to the spirits of the ocean to ensure a safe journey

Its just a tradition of celebrating. Like we have the tradition of cutting the ribbon at the opening of a shop or organization etc. The lighting of the lamp as a good start to any event, and many more. So basically its just a sign of celebration.
