Liver pate - so so cheap!

As I am going on holiday in a week (YAY
) I have been extra good on my diet this week to try and look a little more presentable around the pool!
When I am being strict with my 'healthy eating'regime I have to have plenty of great recipes to go at so that I don't get bored.
One dish I have made and really enjoyed was a delicious liver pate - and you wouldn't believe how quick, easy and cheap it is!
I only paid 35p for the chicken live, they are so cheap and available in all supermarkets both fresh and frozen
I just fried onion and garlic then the liver and blended it all in the processor with salt, pepper and some fresh thyme and it makes a delicious smooth pate. There's plenty for three of us and cost less than50p to make - now that's a bargain = a healthy and tasty one to!!

I have made chicken liver pate and love it. Sometimes I add a bit of beef liver to add flavor dimension.
One of the cheapest meals I make is tuna casserole. Any simple pasta or rice dish is usually inexpensive, as are vegetarian meals.

It is yummy, easy to make and my granddaughter loves it; motivation enough for me.

We eat a lot of chicken and veggies in our house. We also eat a lot of pasta and rice as we can stretch these a long way. I am very frugal when it comes to shopping and I usually am pretty good at stretching a dollar. We do make a lot of stews in the winter time and that is really cheap on the budget. My daughter is very creative at making recipes with just about everything except the kitchen sink in it. They don't always look very attractive but they taste very good. She is only 12, but she looked up a recipe on the internet for meatloaf on day. She saw a recipe that added lentil beans in the meat in order to make a lot of meatloaf with just 2 pounds. She told me what she was doing and I thought yuck, but she didn't tell anyone else in the family what was in it. It tasted great and no one ever knew...except me.

I can't think of any cheap & healthy meals off hand. Perhaps Chinese using a bag of bean sprouts for the main part and various frozen nveg to spice up or fill out.
We do bargain shop a fair bit. Buying cut price fresh meat/bread etc to freeze, and multipacks or 2 for 1 on items with long storage codes.
