Black-eyed Peas

I am attempting to cook black-eyed peas for the first time. I have them cooking now, and I put some smoked ham and some smoked sausage in the pot to help season them. I am going to cook some rice, and some JIFFY corn bread to go with it. I am also going to fry up some other smoked sausages that I have to go along with them. Wish me luck...LOL

yummy. now that sounds good. some good ole' down home southern food. its all good. my son loves for me to make pinto beans with fried "taters" and the Jiffy corn bread. havent tried making regular from scratch corn bread since it came out. so many things make us lazy these days. dont you think.? lol.

I actually was going to try to cook some cornbread from scratch, but I didn't have the ingredients I needed, and I didn't want to go back to the store, so I decided to just go for the JIFFY bread to go with it. I am not really crazy about pinto beans, but I like lima beans...

Is this your specialty? I always like to cook mixed beans soup. It is so nutritious. Wish you good luck in your kitchen adventure.

Wow, that sounds good. I've been hungry for beans or something like that since the weather has started to cool down. I make cornbread, fried potatoes and greens like spinach or wild greens to go with it. Now I'm really hungry and I just ate!

The meal sounds good except I didn't hear you mention anything green. You definitely need to fix a salad or something green to go with that nourishing meal. Also, if you add a bit of regular corn meal to the jiffy, it wont be as sweet and not cakey tasting. Also, if you were in the south you would fix some sweet tea to finish that meal off. Good luck.

I must admit that I've never had black-eyed peas in my life but we really like to eat pinto beans prepared the same way that you've mentioned. I will use some pieces of country ham to season them and then I will make corn bread to go along with it. This is really a delicious meal and though it takes all day to cook it, it also doesn't take a lot of effort. The main thing that you want to do is to make sure that you have plenty of water in your pot at all times. It is awful when they scald.
