I am planning to make Buffalo Chicken on Christmas Eve. But then I am thinking otherwise if I should do that since there is 1/4 cup butter that is required for you to make the Buffalo Chicken. My question here is aside from Lite butter can I also substitute it to margarine?

If you decide to substitue the margarine for something else, I would experiment with the recipe and see what I liked before making and serving to company. Some recipes when they call for butter do not adjust to the use of margarine well, also different brands of margarine will effect the outcome, this due to the water and oil contents in them.
If this is a one time thing and your concern is just the high cholestrol and not a real health hazard, I would say use the butter. I have high cholestrol and buy special margarine for eating but I use the regular margarine for certain things I cook. I have one cookie recipe that I cannot use anything but butter in it.

It'll contain lots of trans fats & bad cholesterol whichever way you look at it
. Most butters, margarine, oils, etc are fine at room temperature or a little above, but when heated to higher temperatures, turn into trans-fats & other nasty stuff
... except one: coconut oil
! This is really the greatest & healthiest of all oils & is definitely worth you researching. If it were me, I'd substitute your Buffalo Chicken recipe & use vegan fake meats instead. They even make whole prepared (but frozen / refrigerated) animal-like looking & tasting turkeys, chickens, etc & some companies even custom-make it for you. Just heat & eat & maybe use the sauces they suggest / provide. It's not the healthiest thing I could think of eating, but it'll be way better for everyone than what you're planning, by the sounds of it. The best thing is that they make them nowadays so no-one can tell the difference either & you'll save money into the bargain.

Butter is better for you than margarine so stick with that, or substitute olive oil. Olive oil can take the place of butter quite often in recipes, as long as the food isn't cooked at a high heat. Either one, butter or olive oil, are natural and healthy, basic foods.

Nope, use the real,old-fashioned butter that served many generations good! The less synthetic the product is, the better it is for you. Remember, not all fats are bad for you, just the refined fats, and hydrogenated fats. Margarine is a refined fat, and I do admit to using it do to it being cheaper, but if I had more money, I'd be buying the real blocks of butter.
