I made the best vegetarian meal last night!

I am not normally into this kind of meal, but for some reason last night I felt like having a meal without meat in it. And it went real well. I am so happy there is a leftover cap for me to eat for lunch. lol.
Stuffed Portobello Mushroom Caps
3 portobello mushrooms (came in a 3 pk)
1 bx instant chicken vermachelli rice mix
tricolor bell peppers
2 oz cream cheese
3 oz Monterey jack cheese
1 tsp olive oil
I cleaned the caps first and coated them with butter flavored cooking spray. Olive oil would have worked too, but I wanted things a little easier. I chopped up the peppers and added them to the skillet and sauteed them with the rice mix in a bit of olive oil. Then prepared the rice mix according to package directions. Once it is all prepared, I added the cream cheese and mixed it in well so that it gummed together. I filled the caps with the rice mix, topped with cheese and baked at 350 degrees for 20 minutes.
The flavors of this are so crisp and clean. Not weighed down by meat, yet filling because of the portobello. I am definitely making this again.

Hi tanniebabe,
Your meatless dish for dinner must have being surprisingly delicious. We should all try changing our diets every once in awhile; our digestive system needs a break from trying to digest or breakdown all the heavy foods such as meats. You meal include many, if not all, healthy items. I will definitely think about change my diet selections a few days a week. Thank for sharing.

It was so good that my 3 year old daughter took the leftover cap from me and proceeded to eat it with mmms and little sighs of delight. It truly is good to try something new once in awhile. I am trying to eat healthier and thats filtering down to her. She eats this type of food better than chemically enhanced stuff.
The only thing I would change in this recipe for next time is to make the rice mix myself rather than instant boxed. There are a lot of preservatives and chemicals in that which made this dish not quite as healthy as I would have liked.

Hi,
I am sure that made you feel really good when your daughter enjoy your healthy meal without asking, "where it the meat." Good job, mom. I agree about the rice, anything instant can't be good for you.

I don't eat portobello mushrooms near as much as I would like to.

It sounds good. I am not much of a cook otherwise I would try this. I think I well ask my mom since she can actually cook.
