Our Noche Buena (Christmas Eve)

During Christmas Eve we are preparing something to eat that is really special for us. Oftentimes we are getting those recipes from the internet so that we can try something unique that we haven’t eaten before. Though there were food that I’ve prepared on Noche Buena which is I’ve already cooked during my birthday since my niece likes me to cook the carrot soup with cinnamon. This time I tried cooked the chicken with pizza sauce though this was just an experiment so that I can mix it with Pesto when we are ready to eat it. I tried to make salsa so that we can also use it to dip our bread, though I must admit the fact that it was not too tasty or a little bit no taste because I have put water on it. But now at least I have learned what to do on next time and the secrets that I must put so that it will be definitely so delicious. I prepared the pesto 2 days before Christmas Eve so that it won’t be hassle and time consuming for the Christmas Eve itself. I just used ordinary roasted nuts since we can’t buy pine nuts here in Manila or if ever there is pine nuts that could be expensive or not practical as part of ingredients and parmesan cheese. I just cut the basil leaves then put many extra virgin olive oil. My Mom likes the taste of my pesto that she even compared it with other pesto that she have already eaten in some restaurants because she told me that others are too oily then it is not extra virgin olive oil. Unlike to my pesto it was balanced. I have also provided the ciabatta bread that I bought 1 day before the Christmas Eve but unfortunately it was not soft since I have put it inside the refrigerator then make it warm by using microwave. My sister in law have cooked the Paella realizing that it will took you half of the day when preparing it and I told myself as well that I am not going to cook it because there are preparation in food that is really time consuming. She already asked help from our maids but then it was still the same. Though the Paella was really yummy and that is my first time to taste the home made Paella. My niece even asked that why do people must work hard for Christmas? I answered her that it is because people wants to make something unique and special on Christmas day since it is only once a year.

Nobody's an excellent cook in the family, and so we just ordered our media noche food. We ordered from Cravings, and although they were tasty enough, I would have liked it if it was prepared by us. We use to do that, at least my aunt use to cook for media noche, but she begged off this year and just cooked for christmas dinner. I did enjoy the desserts we got. I got the list from Inquirer and tried to buy what we can. The Banoffee Pie from Banapple was a big hit last christmas eve. I hope this year I will learn to cook at least one special meal for christmas 2011.

What is Cravings? Where is that located? Is that a restaurant? I haven't tried any food from Cravings. So what do your Aunt usually cook for Noche Buena?
