Seasoning your food.

I find that a little bit of seasoning can go a long way for food, like salt, pepper, or all of those special sauces. If there is too much of the seasoning, the food just tastes like a certain type of seasoning instead of the food. If you go to that extent, you might just as well eat salt or spices or sauces or whatever straight. I think that just a little bit does add to the food but like many things, excess will taint it somewhat. What do you think?

Yes, you are right. Too many spices will overpower dishes. The old saying "Everything in moderation" is all too true. That is why I always flavor my cooking to taste, no matter what the recipe says. And when I serve sauces on a dish I usually put them off to the side or have the person dish up their own sauces so that they don't get too much or too little on their plates.

Moderation is in fact the key. You need to pace these things. To get the best taste out of everything. Otherwise not everything would taste the best and that would be a shame with a lot of food. I am in completely full agreement with all that you have stated here in your discussion. In the past i was terrible. I never really added things like pepper as i wasn't that keen on the taste of it. I did however go way over the top with the salt. I would make something, in that i would add quite a bit of salt, then when i plate the meal up i always then added more salt on top of the meal, the salt was the biggest thing i tasted, messed my meals up but for some reason i continued to do this for many years. Luckily i did stop, i am the opposite now and i also like pepper now and so i make sure that i season my food, but i do not overdo it at all, a little bit of seasoning can make a difference but you certainly don't need to go over the top with the seasoning, i guess i learnt the hard way.

Indeed, the trick is to enhance the taste of the dish. Not make the dish taste like the seasoning. There is only so much that you can put on a dish, before it is completely messed up. I think that when i was a child it did not bother me that much really. As i started to get older and wiser i changed, which i am happy about. As you say, the trick is to enhance the dish, not spoil it by overpowering the dish with too much seasoning that you will just not enjoy.

Yes indeed, too much really defeats the purpose of seasoning the food. The trick is that you need a little extra, to help enhance the food. If too much is added, then it kind of dilutes the food. I think I'm the opposite. I salt everything alot. And if my wife is cooking with garlic or lemon then I ask her to add extra garlic and extra lemon. Otherwise to me the dish is too bland.

I agree with you, friend. A little sprinkle of the seasoning will really add flavor to the dishes we eat. And anything that is too much will only fade the real taste of the food. I don't really put on MSG on foods that I cook, I just sprinkle a little bit of seasoning to enhance the flavor.

Very well said. There is always a balance that needs to be found. Unfortunately there are people who overshoot said balance and thus are going to have too much of a good thing. And there can be a lot of a good thing for seasoning, but if you put too much, then you might as well just eat the seasoning straight. Thank you for your response. It is much appreciated. I do believe food need spices and such to make it taste good. Salt I have seen it in every dish and yes it does go a long way. As long as it isn't over seasoned it would probably taste good.

A little bit here and a little bit there, that can go a long way. And it can add a bit of kick to the food. Providing of course it doesn't really overwhelm the actual taste of the food. Sure, it is great to use spices but know the right balance of how much to put on any food is very important. Some people over season their food while others under season their food. I like a lot of seasoning but of course not so much that it feels like I am eating a brick of salt. We use something called Soul Seasoning on a lot of our meats, it is a spice blend and has a lot of flavor you have to be really careful not to go overboard with that spice, plus it is mostly salt so it is not healthy to put too much on.

Yes seasoning is just what the name indicates. It is to season the flavor of the food, just a little bit. However not to replace the flavor of the food. When it is replaced, it is not that healthy. I try to underseason my food. I can always add more if needed but it is clear that I will not be able to take any of it away

Besides, as you say, noone wants to have the same taste in his mouth everyday because spices drown the taste of the food.

Yep you can always add a bit more. And there are some people who would want more, but there are some who will be content just with a small amount. When cooking, you have to keep that in mind.
