What's for dinner? It's Mexican night here tonight!

What are you cooking for dinner tonight? I'm making burritos and enchiladas and guacamole and homemade tortilla chips. Also for the people who hate Mexican food (I can't imagine that) I'm making ravioli with red tomato sauce. Mmmmm....the onions are cooking right now for the enchilada sauce and they smell so good! oohh my god.. im not mexican and from paraguay... but i love eating those. there soOo good. your so lucky to eat that tonight.. i have to wait like for the weekend cause thats when my mom cooks mexican food!! yummmyy =] well as for what im eating with my family.. today is pizza/movie night.lol so we order pizza,, get the chips outs, watch movies as a family.. then die in with desserts..lol

That's funny you say that. My father-in-law is from Paraguay. My husband is from Argentina and I am American (not Latina). But some nights I cook up entraƱa with chimichurri or else some noquis or some mandioca. I bet you know what that stuff is. I like that your family has pizza/movie night. Sounds like lots of fun!

You're right! I'm not blood Latina, but I speak Spanish and know how to cook Argentinean food and I act Latina too. All my friends are Latinos/Latinas also. lol

I would love to come over and celebrate with our burritos as I am feeling quite lazy today, after a night of fun yesterday. Since it is just my boyfriend and I and both of us are sort of tired of last nights fun dinner, cocktails and his show, we basically sat home all day and had ham and cheese sandwiches earlier today, so dinner has not even been contemplated yet.

LOL, no the sandwiches were not enough I ended up making some Spanish red rice and some pork chops..it was yummy,

You are a better person than me because I'm being lazy tonight! I'm going to go pick up a pizza in a couple minutes. It sounds so yummy! My husband understands that I'm tried from working all day, and since it's halfway through the work week, why not celebrate? The food you cooked for dinner sounds so delicious! Sometimes I wish I know more recipes and had more ingredients to make a variety of things, but I'm not always up for the challenge. To answer your question, though, it's a cheese and pepperoni pizza night tonight! I hope you enjoy your dinner also.

I understand about being tired. Up until 6 years ago I worked full time too. But when we had the 4th child and my babysitter (my mother) was not able to watch them any more then we decided for me to stay home. I've been improving on all my cooking skills ever since.

hi schulzie I am in a retirement center due to my son and I having been evicted two years ago as due to his being laid off we got behind in the rent. anyway I was cooking for myself up to the time I came here. tonight we had spaghetti with a delicious red sauce and broccoli and cauliflower so that was really good.the cook here is good with Italian dishes and Mexican dishes too. I love his enchiladas and tacos so much' and he is Mexican and great at Mexican dishes. I was82 when things went so bad and I would still be cooking if we had been able to pay rent but my son had been out of work for almost two years. He has a part time job but its not lucrative enough for paying rent. He is still in gov.sponsored trans sistional housing an apt. he shares with three other men.I only brought all this up because I miss not cooking for myself so much. I love to cook and try new dishes too.

I'm away from home for quite a few weeks just now, and missing my family dreadfully. On the other hand though, I'm not needing to cook at all as it's all provided for me :-) It's a lovely treat to have meals served with minimal input from myself!

I love Mexican food. Tonight we are having steak, mashed potatoes, and corn. Cannot wait. Though a trip to On the Border sounds perfect to me about now...Hope you enjoyed your dinner.

Gosh, your dinner sounds really great! I love steak and mashed potatoes! Who doesn't like steak and potatoes? On the other hand, I love On The Border too. I haven't been there in quite a while. I really like their beef and cheese empanadas...

YUMMY!!! I haven't cooked Mexican for a long time but I love to make chicken enchiladas with green chile sauce. Last night I had some chicken with stir fry vegetables. Tonight I'll probably microwave a frozen dinner just because it's a lazy day--I don't eat many of those because of all the chemicals and sodium but they're good to have around when I don't feel like cooking.

I haven't had a frozen dinner in years. I don't even know which brands are the better ones any longer. But I know what you mean about lazy days. I think I'm having one today.

Atchara - some locals made profit for making a home made atchara
hi there! we just had our lunch and now i'm already thinking what's for tonight's dinner. I love Mexican food! tacos, burritos, nachos to name ones. For tonight's dinner i'm thinking of something dry like grilled pork liempo or spicy chicken wings to match our home made "Atchara". This tangy relish is made from green papaya, some carrots and raisins. It's a perfect compliment for grilled foods.

My goodness! I hope you have some leftovers! I am on my way over. We are having big ol thick hamburgers tonight with three kinds of cheese over top...dressed anyway one likes them...LOL. I love Mexican night...we usually do chicken enchiladas...mmmm...once my b/f made pork and shrimp enchiladas and they were awesome.

Those burgers sound pretty good though too! And yes, we had lots of leftovers and ate some the next day. So that was a little bit of a money saver right there.

]What's for dinner time again! I am making stuffed shells with ground beef, mushroom and cheeses for dinner! It is good because I can prepare aroudn the evening, store it in the oven until my husband comes home, wash all the other dishes. I can just throw the pan into the oven to heat it up when he comes home.

I like your way of thinking! I like to prepare things in advance too so the the cleanup time is minimal. And then you can enjoy the evening with your husband.

We had soup for dinner last night. I made chicken noodle for my husband and tomato for me and my two sons. My two girls had macaroni and cheese. It wasn't the best of dinners but it was what everyone wanted.

Oh my gosh this sounds DELICIOUS!!!!!!! Esepcially the guacamole part - I CAN'T GET ENOUGH OF THAT STUFF!! I'm not making anything for dinner. Skipping it I guess. I'm pretty hungry but all in all WAY too tired for work to be bothered to even make something simple like soup. All I want to do is post a couple of times and then hit the sack. But enjoy your dinner! It sounds awesome!

Believe me, I understand about being tired sometimes. I can't get out of cooking though, no matter how tired I am. I have a husband and 4 kids waiting for food every day. I hope you got some rest that night.

Oh the sauce for the enchiladas is just the McCormick enchilada sauce mix. You can find it in most grocery stores, then you just follow the directions on the back of the envelope.
