Why is only Mozzarella cheese used for making Pizzas? Have you tried making pizzas with any other cheese. Was the pizza tasting any different?

Well, it's not the only cheese used for pizza but it's certainly the most popular :) I believe the reason for using certain cheeses isn't just about how they taste but more about how they melt. Some cheese, like mozzarella, gets stringy and stretchy when it melts (which is something a lot of people like about pizza) but it generally won't flow all over the place like other cheeses. Provolone melts in a similar way to mozzarella. When you use other cheeses on pizza, you get a different outcome. Cheddar, Gouda, Monterey Jack are among cheeses that melt really, really smooth... in fact, they can lose all their body. It's like putting cheddar on top of a casserole and it almost "melts away" right into the casserole instead of forming a layer on top. If they're mixed with a stretchy cheese, like mozzarella on a pizza, they sort of stick around better :) There are also cheeses that soften up but don't melt -- like ricotta or feta. If you like greek pizza, as an example, you notice that the feta softens into "clumps" on the surface but doesn't spread like others do. I like experimenting with mixes of cheese on pizza but I've never made one that didn't include mozzarella :)

Well explained. It does tell why Mozzarella is preferred for pizzas.

In my country mozzarella cheese is a delicaty and quite expensive. So I make my pizzas with any cheap ,nice tasting cheese that will melt. I think that it tastes about the same as it is other flavors what make it taste one way or the other.

I answered another post about cheeses yesterday and told my friend that I made "fake" pizzas when I was in a hurry, with a piece of bread, any cheese, a slice of tomato or a bit of tomato sauce, dry oregano and whatever else you have in your fridge. I do that often when I´m mylotting and noone will be coming. It makes an awesome lunch with a cup of coffee.

As long as it is awesome what if it is 'fake'. One never knows. If you give your 'fake' one to taste to any culinary expert I bet they will find something special and market it under the name 'marguicha pizza ala fake'

I think pizza tastes as good with any other cheese as it contains several other ingredients too.

I wasn't even aware that it was only Mozarella cheese that was used on pizza. I made a pizza not too long ago and I actually used cheddar, mozzarella and feta which is amazing on a pizza. Pizza is one of those foods that you can experiment around with and its fun to play around with.

Pizzas are also made, as you have pointed out with cheese other than mozzarella but if you look at a standard pizza recipe you will find mozzarella there.

Hi. allknowing. I guess because it makes the pizza taste really good. I have never tried to make pizza with any other kind of cheese though. I know that I have tasted a cheddar cheese pizza before. This cheese is so much more richer though.

It looks stringy and that I suppose what is required for a perfect pizza!

I do believe that mozzarella is escential for a pizza to taste lika a pizza should taste, yet, I always use two or three types of chesse, and, yes, the taste changes, but, it is still great.

I think that you are right, I like it too. Mozzarella is special, but, part of the fun in doing your own pizza is to experiment with tastes and flavours.

Some are particular and follow the original recipe to the 't' and the original recipe for pizza is supposed to have mozzarella cheese. But you are right. I too chop and change recipes to make them more interesting and innovative.

Hi allknowing! I do not like cheese and would not touch it and so I am disqualified from making any authentic remark about the taste. However, I make the topping and decorate it with cheese for a pizza base[we get readymade ones. I simply grate the cheese cubes we get in normal departmental store . Is Amul cheese cube Mozarella cheese?

The shop keeper will give you Mozzarella cheese if you particularly ask for it. Amul cubes are not Mozzarella.

I like to make pizza at home. And I just use Mozzarella cheese and I haven't tried other kinds of cheese yet. I think Mozzarella cheese suits pizza. When it melts, it is like silk and the flavor is great. I love China

There is always a reason why recommendations are made. We all know the countless varieties of cheese available.

Mozzarella was used in the first original 'Pizza margherita' which represented the Italian flag. Mozzarella is cheap, readily available and white and together with (red) tomatoes and (Green) basil leaves, portrays those colours perfectly. It is the base of most of the Italian pizza recipes but there is also one 'Pizza ai Quattro Formaggi' which uses four different cheeses - and is delicious! You can see the recipe here: http://italianfood.about.com/od/breadspizza/a/aa042205_3.htm More about the original pizzas here: http://italy-pizza.com/history_of_pizza.html

It is sad really how the recipes lose their 'sheen' when they are globalised. Strangely though I have always come across as you have further emphasised it, the right recipe and I do believe that, that stringy feel one gets while biting into the pizza is because of the Mozzarella cheese.

We all add, multiply and subtract and you are right that is if the ingredients are great they should taste good but the original pizza I suppose has Mozzarella cheese in it.

I like my pizzas with any kind of cheese...I like variety. I don't find Mozzarella gives the best flavour. I really like Cheddar Cheese on my pizza especially the old white kind. Feta is another good flavourful one.

Pizza has now become global but whenever I read recipes it is the Mozzarello cheese that is recommended. Recipes have some divinity about them and when an item is made from the stuff that qualifies to be called as that it is better that we use the right ingredients and in this case Mozzarella chees it is!

I have tried it with different cheeses but the taste changes so dramatically. I do like white pizza with ricotta and mozzarella.

You have a point there as why would most recipes suggest the Mozzarella?
• Philippines

As for me, I experimented to cook with 2 cheeses; mozzarella and cheddar. The taste's different. when you put cheddar cheese, it's also different. Usually, izza has a mozzarella cheese because of its stickiness when it melts and has a different taste too. But, it also depends on the toppings you're putting. Overall mozzarella cheese is the best cheese for pizza.

No doubt we try our own concoctions but perhaps Mozzarella is THE cheese that qualifies pizza to be called as such. Just a thought.
