what ingredient do you add to make cookies last longer?

I just have started a cookie making for a business and i am just wondering how or what to add to make the shelf life of the homemade cookies last longer. I am planning to display some of my cookies in convenience stores and i want it not go stale in a weeks time. I have been trying to read a lot of tips on the net but then most that i have read on it to keep it in an air tight container but then in stores usually you need to have it packed ready to be sold. I needed your experience and advice on this much. Thanks a lot.

There is really nothing that you could add that would make them last longer. The way you use to store them would be what you need to address. Sealing in an airtight container with waxed paper under each layer would probably help. Using shortening to make the cookies would help them to last longer but that might compromise the taste just a bit but still acceptable. Also you can put a slice of bread in with the cookies in your airtight (think Tupperware here) container and replace the bread as needed. I doubt that homemade cookies would last long enough to require additional slices of bread.

Thanks for the info that you have shared. I am packing my cookies by 5's since i am selling it and i need to know when do it get stale so that I will be able to determine how long will i put in on display in a convenience store. well maybe shortening will help as what you have said it may compromise the taste but it won't really affect that much. i think with the right amount of shortening and proportioned to the ingredients it won't matter at all. thanks again.

For your purposes, if the cookies are stored appropriately, they should last 3-5 days before going stale. Most governments have regulations for how long they can be on the shelf. I would think the 'sell by' date should not exceed that length of time. Make sure they are wrapped tightly to keep the air out. When storing cookies for my own use, I have been able to microwave a stale cookie with a little sprinkle of water on them. I don't microwave longer than 10-20 seconds though.

I baked cookies last night but I really never thought about putting something in it that would make it last for a long period of time cause I know it will be consumed before 3 days. My husband likes to eat and he most of the cookies already.

Thanks, well if its for family consumption i won't usually put in something to make it last but then i am going to put my cookies for display and i want to preserve it fresh and yummy after a week or so. :)

A friend and I have been looking into doing the same type of business where we are. The thing you should do first is find out if in your area thee is a time limit for fresh food. Here bakery items can only have a two day shelf life according to the local and state boards. Something you might want to make sure about.

Thanks for your reply. I am going to check out the country requirements of baked foods from where I am from. thanks for this info I am not really aware of this.
