hello, This is like the word "Oh my god" it was abbreviated by "God" only and the other words which is "You gotta be kidding me" is like you are joking with the one you are talking about. In more easy way sentence here is "God, are you joking me?"

You're kidding = you're joking. God, as an expletive, short for "Oh my God" or similar. Thus, the whole thing means "Oh my! You're joking, aren't you?" - I don't believe what you're saying/doing. Also used when something bad happens as a sort of "I don't believe this just happened" expression.
