Muffin Ideas

My daughter has to make muffins for her 4H baking project this year. We have tried cheese muffins and chocolate chip muffins. I cannot remember the type of muffins I made for my champion muffins back in my youth but I do know they really frown upon muffins with chips and things in them unless they are perfectly distributed throughout the muffin. We do not really want to go down that path. I am trying to find other ideas for muffins that we can make. Does anybody have a favorite muffin type that does not use chips or berries? I will appreciate all answers for various types of muffins that we might be able to try! Thanks for the help!

Why don't you try banana muffin. I love bananas and it's so affordable and easy to make. My mother used to make banana muffin back in my hometown. Or maybe you can also try plain muffin and top it with boiled icing. You can put food coloring to make a colorful boiled icing or just plain white boiled icing. Then sprinkle it with small candies of different shapes or small marshmallows would be fine.

I like apple muffins, but I grind the apple at the very last so the colour does not change. Those go together with a bit of cinammon. YUMMY!!!

I found a recipe for a coffeecake muffin that is really delicious. It's a simple muffin but has the traditional coffee cake topping (brown sugar, flour, butter crumble). Satisfies a sweet tooth without the need for chocolate. You said you've made cheese muffins but have you ever tried cheddar and bacon? They make a really cool breakfast muffin and not a lot of people tend to make those. One of my favorites is zucchini muffins. Great way to use the abundance of zucchini some have from their gardens and they are moist and tasty (zucchini bread is also yummy). Good luck to your daughter on her 4H project too!!

i have to say my favourite are carrot cake muffins. i usually make them all the time when we have to go to a pot luck meal.

My kids favorite are pumpkin muffins. I made some Lemon Poppy seed ones a few times that were really good too. The poppy seeds are really light, so they don't fall to the bottom of the muffins like heavy nuts or berries would.

Even though I love blueberry muffins, I think that the best are common muffins , the kind that you cut in half still hot, place a dab of butter and some homemade jam and eat. I also like them with honey and if I want something not sugary, I´ll put some Philadelphia creese inside. As for chips, I´d rather use the chocolate chips to make cookies.

At our house we like apple muffins. We take apples, wash, peel, and chop them up into small pieces. Raisins are good to add with the apple too. I know you said no berries, probably because they're mushy. We do use blueberries though, and they bake in there great (with no juicy, mushy mess.) When you go to add anything into muffins, it's always helpful to shake a little flour on them before adding them in, and when adding them in, fold them in instead of stir. This prevents them from clumping up or floating to the bottom of the muffin. The Amish around here sometimes make a delicious pumpkin muffin, and also a cranberry-orange muffin. Yum!

Banana is always a crowd pleaser... or spice cake. I toyed with the idea of making a chai tea...well, cupcake but if you don't ice it then you can call it a muffin, right?... for a friend for his birthday but never figured out how.

My favourite muffins to make are blueberry, but I also make banana ones ( a low fat recipe)that are always really popular with my family.

Well its good to try something new every time. I think you should try strawberry muffins because everybody loves strawberries!
