What to do with this eggplant?

A friend brought over a few bags full of fruits and vegetables from her garden. Everything from cucumbers, zucchini, and squash to strawberries, plums, and blueberries.
One vegetable that I found in one of the bags was an eggplant. I've seen eggplant before on TV, and the internet, but not in real life. I have never eaten one, or cooked one.
So, my question is, what do I do with it?
What can an eggplant be used for? How would I cook it?
I am sure there are many ways to cook an eggplant, just like other vegetables... but I am clueless with this particular vegetable.
Also, I am curious to what they taste like.
Can any of you myLotters give me any information to help me out with this dilemma?

My favorite is eggplant Parmesan, make it like chicken Parmesan but with eggplant. Bake stuffed stuffed eggplant is pretty good too, you can stuff it with just about anything (Italian sausage is the best on it). Simple fried medallions with a little butter is good, or a marinara to dip them in. Eggplant is probably one of the yummiest and most versatile veggies out there. You won't run out of things to do with them.

Actually, there are many ways to cook the eggplant. You can either cook them with added some chicken or even just steam them. After steam them, you can add some soy sauce and chilli sauce to them, ready to eat. My mother even fried them first before she cooked it with some shrimps. It tastes just very delicious. Hope by now, you hav got the ideas to cook the eggplant...

Eggplants are very tasty. I like it when it's sliced and then fried. I eat it with soy sauce and they are very tasty. Some people sliced the eggplants, dip them in beaten eggs before frying them and then serve as appetizer with mayonnaise.

can i come to your place for having those vegetables and fruits..............................i wish i would.............
u can see different receipe of egg plants on youtube........
one of the way how my mom cook is .......... but those eggplants on fire....for 5-8 mins do its skin start removing once you have done with it then ......thn mash the pulp of bringles by removing the skin.
on pan have oil add cutted onion in it soathy them (pink) add tomatoes to it.... than salt,redchillies,coriander powder once tomatoes are done add the eggplants pulp into it put a cover over it slow the flame and cook on stem for 5 mins.... garnish it with green chillies and green coriander...

If you were to ask me the simplest way to enjoy eggplant is to cut it and slice into halves then fry it in olive oil or any oil you wish if you are not as health conscious as I am. Don't over cook just let it brown a bit on both sides and then dip in either lemon juice with soy sauce or vinegar with minced garlic and salt. I love this with fried fish and friend rice of course. Hmmm, my mouth is watering now.

There are several ways to make eggplant.
Slice about 1/4" slices and you can get a seasoned breading and fry it.
both my husband and son like it like this.
Another way I use eggplant is when I make shish kabobs.
I try and use various types of vegetables and these cut up nicely in chunks and skewer them on with mushrooms, onions and your meat.
I either baste them on the grill with barbecue sauce or a teriaki sauce.
I also know there is a casserole but I have never tried it. We mainly like ours the two ways I described.
Have fun with vegetables trying different ways you may find a new vegetable you like.

There must be HUNDREDS (well, not quite) of recipes for moussaka out there on the internet. Plus recipes for stuffed aubergine (the other name for eggplant). Several Turkish dishes include it.
Some people think that, to remove a perceived bitter taste, aubergine slices need to be soaked in water for 30 minutes before cooking. I'm not sure. Try both ways and see.
What you want to avoid, if possible, is exposing cut aubergine to air for too long, as it then goes brown.
