Crock Pot Dinners

I know you can cook a roast in a crock pot and other dishes, but have you ever tried to cook something totally different in a crock pot? Say like some beans or some kind of soup? I was thinking of cooking something in the crock pot but I am not sure what I could cook in there? Any Ideals?

I tried to make bean soup with a meaty ham bone several years ago. I threw dry beans in with stock, barley, the bone and seasonings.
Well let's say it was an epic failure! The beans were hard, the barley was mushy and I let it cool even longer (thinking that this was exactly what the beans needed) and it pulled crud out of the bone so I had a big gooey mess!!!
Apparently salt prevents the beans from absorbing moisture.
So, please learn from my mistake. If you're going to make beans, let them soak in plain water in your crock pot on warm over night before proceeding with any recipe!
Once softened, you can do anything you want with them!

I always find it great to learn from others mistakes.
One great recipe for onions . .
Slice onions cover with balsamic vinegar and a tsp of olive oil. Sprinkle with salt & pepper. Turn Crock pot on low. Cook until onions have almost dissolved.
You can then serve with cannellini beans and grilled chicken. A great tuscan dish, but one which should be made while you are home. Otherwise, you have a mess at the bottom when you come home from work.
Also, to doctor up tomato sauce, I add two cans of fire roasted diced tomatoes (lg cans), italian seasoning and dome red pepper flake. Cook on low all day. They juices will cook down and richen the sauce. It will taste like homemade.
Just cook pasta and serve!

You can do just about anything you want to in a crock pot. Our crock pot is our most valuable kitchen appliance. One of our more favorite things to use it for is to slow cook a pork loin in. Here is how we do it. Brown the pork loin, put it in the Crock Pot, cover the meat with a big can of Refried beans, pour Salsa over it and turn it on at low heat while you do other things until supper. Take a large serving fork and shred the meat. You can use this as the starting point for all sorts of things. You can bake a potato and use this as a topping. You could steam some tortillas and use this mixture to make enchiladas. Use your imagination. Have fun. Enjoy.

I make stew in the crockpot all the time. I usually put all the ingredients in around noon. Let it cook on high for 1 hour and then turn it down to low and let it cook for about 3 hours. Yummy. Just a side note. You should brown the meat first. Otherwise, it won't look cooked. Best Wishes!
