Hi - Definitely throw in the carrots. If you're going to use the squash, hold off on that until about an hour before you eat. I would imagine canned corn would be ok, maybe peas. I would guess, think about a vegetable soup. Are you using beef stock or chicken stock as a base? That would help, and you can even throw in some macaroni shells or rice? Or best yet, if you have any barley, that would be great! If you have cabbage, that would be a nice addition as well, but again hold off on that until the last hour or hour and a half so you don't cook it to smithereens!

You know, My mom used to do that too! Great idea for next time. This time I put squash, carrots, greenbeans and served with mashed potatoes.

For flavor? If you have beef boullion cubes, throw in 2 with the water. When the roast is done cooking, you'll have a tasty roast and the liquid can be frozen in a container to make really tasty gravy at some later date. I do that all the time because I'm not always making a roast when I'm making mashed potatoes, and I absolutely hate canned gravy lol. Also, if you don't have boullion cubes, and you have Ramen noodles, you can add one or two packets of that to the liquid required. However you mix it up, it will still taste great. I don't know about adding squash though, unless making a stew I would think it'd get too mushy?

Here in the UK we call what you know of as a 'crock pot' a slow cooker!
I use mine all the time and at the moment have glorious smells wafting through the braised steak that is cooking in mine now!
I add whatever I have in my refrigerator or cupboard - any vegetable (especially root vegetables like carrots, swede, turnips, parsnips etc, some chopped garlic, spring onions (scallions), leeks, celery etc. Tinned tomatoes or tomato paste is also good with a good mixture of fresh or dried herbs.
