Zucchini ideas?

One of my neighbors just gave me about 6 zucchini's! What can I make with them? Thanks

You can add them into a stir-fry. Maybe some rice, broccoli, chicken, zucchini, etc...? Or, you can add it into a noodle dish with other vegetables like bell peppers, onions, etc. Maybe some shrimp too?

Zucchini is good in many recipes as it is mild and a good foil for other ingredients and seasonings. A simple saute is good. A stir fry with other veggies and/or chicken, shrimp,etc. I like to oven roast it, along with yellow squash. A veggie saute with onions, garlic, tomatoes, oregano, (add other veggies if desired) and add cheese. Use in green and veggie salads. Add to pasta dishes. Put on pizza as a topping. Add to ratatouille. Make a zucchini lasagne. Fry and serve with ranch or blue cheese dip. Add to omelettes. Make zucchini bread. Add to most any casserole dish. Make a bechamel/mornay sauce/ saute first or bake after sauteed and sauced. Soup, alone or combined with other veggies,leftover proteins, either broth or cream style, or with a tomato base, like a minestrone. Some of the above can be frozen if you have gigantic zucchini and have to use right away.

Baby food :) Just kidding, but that is what I use them for right now! Otherwise zucchini's are a great addition to mixed steamed veggies. A lot of restaurants put zucchini in with broccoli and cauliflower for their steamed veggie side dish. Yum.

We usually just steam ours and put butter and salt on it. Or you can slice it and dip the slices in egg and then flour and fry it up in butter. If you want something sweet you can make zucchini bread. I would try allrecipes.com. They have tons of recipes for whatever you are in the mood for and you can search by ingredient.

I never breaded and fried zucchini but I guess you can like you do for eggplant. I might try the zucchini bread though - thanks!

I make zucchini breads and muffins and I think I even saw a zucchini cake recipe somewhere. They can be shredded and incorporated into hamburgers, spaghetti sauce (would need to puree here), chopped into green salads (raw), made into zucchini slaw and any number of other things. I'm sure you could find a lot of recipes through a web search.

I slice them or cut them into batons, then fry them with some fine sliced leek and spring onions and a good dollop of garlic. They should still be crisp and green when you serve them, just as a side vegetable. Lash

Zucchini is good boiled, steamed, fried, or even in squash casseroles. You can slice it in either sticks or rounds bread with flour and corn meal and fry it. It is great this way especially with a bit of ranch dressing for dipping. You can even add it to soups and stews. It is a very versatile veggie.

I loved zucchini bread, it is a great way to get veggies into your diet and tastes so good. I also slice up zucchini, brown them in olive oil and toss them in tomato sauce served over tri-color pasta - another good way to get those veggies into your day.
