Kids love big flavor. That's why really salty food and sweet food does so well amongst kids. My suggestion is to fix them in a healthy way that has a lot of texture and also a lot of flavor. I would suggest breading them, frying (deep or dry-air frying) them and then adding a great sauce to dip them in. I think a healthy way to go would be to bread them in dried whole wheat crumbs. You can use a little corn starch, egg substitute, some seasoning, and the crumbs. Just roll the nuggets in the corn starch, dip them in the egg substitute, and then bread them. Let them rest for like 20 minutes to form a crust. Some hat sauce in the egg-wash will really kick up the flavor. But India has a bunch of bold spices you could use to bring flavor to the party. A little bit of tumeric and cumin would give them a great depth of flavor. Try frying in olive oil. The mono and polyunsaturated fats in olive oil are very heart healthy. Plus the fruity taste of the olive oil will pack a lot of flavor. Heat the oil to about 325 degrees F and fry them for around 5 minutes. You could use some great Asian ingredients to make a dipping sauce. You could mix some hoisin with some duck sauce and a little chili sauce and you'd get a bit of heat and a bit of sweet all in one.
