What do you add to your organic garden?

I am planning on a large organic garden in the back yard of the house that that I am buying. I plan on putting horse manure down first this winter (horse manure is plentiful) and also I plan on raising rabbits for food and fur so that i will be using the manure on the garden as well as feeding some worms that will be used to feed my tropical fishes. I will also be putting hay as a mulch to help keep water from splashing on the plants and causing problems. This will be anew garden part of which had an above ground pool and the rest grass. What would you suggest for filling the depression where the pool had been? Eventually I want to put in raised beds so that someone in a wheel chair can work the beds easily.

As long as the horse manure is well rotted that is a good idea - if you use fresh it can cause "burn" and won't do the soil much good, it needs to be rotted first in a pile and then it's okay.
How deep is the depression where the pool was? How is the soil in general is it free draining, does it tend to get dry or stay wet? You might be able to get some soil to fill it in from somewhere they are digging out foundations or a hole for another pool (probably free!).
