Last week i had to make dinner for a special friend i have not seen since he left for the warmer waters off Australia. Meeting up with a good friend after so long was great and the night went wonderfully as we finished off 3 bottles of wine while laughing about our teen exploits and failings. believe it or not the hardest bit was deciding what to make for dinner! So i made my best friend Davie Fish chicken breasts stuffed with haggis and smothered with a whisky sauce. what would you make someone for dinner that you really wanted to impress?

Hi ajk Friends and Food for Impression - doesnt quite get on well with me I always try and cook what I can cook good. No matter whether the friend likes or not. I love chicken and also mushrooms with capsicum. So I guess, they will be on my menu whenever I cook and for a reason of celebration. However normally, as there are many here in India who would not prefer non veg on specific days, I would settle with Spinach, cheese and in case I get nothing (depending on the season) I guess... it will be simply... fruits.

I feel the same dear. Simpler foods are not only most luxurious but also time savers. When you have a friend who is moving to another place, I am sure you two would love to spend the time together rather than cooking food at the Kitchen

Hello ajk, I have tried to make 2 or 3 times here English food for friends -- I spent a lot of holidays in England near an old aunt when I was a kid -- and they were horrified only by the view of a Lancashire black pudding. I don't tell you what would happen with haggis. I think that the best think we can make is something local and a bit rare. By example here we have a local trout in one river -- sadly disappearing because of trout farming --, called "grassette" -- it means "fatty" -- which has to be fished by yourself if you want to eat it. I had also some success in spring with a simple hops sprouts omelette : hops sprouts can't be bought in my area, though they were commonly eaten in the past, but we have to forage them. Not expensive, maybe not impressive, but really appreciated.

This trout was appreciated on king's table. I am in a good area for truffles, but I have not the sense of smell of a pig or a dog to find them.

I guess I would make some dumplings! I love them, so as my friends. Another fantastic idea is to make a lasagne. If You are looking for something easy then You could try Chinese food - it always tastes good. If my friend was staying at my place I would make some snacks. Tortilla chips with dip, some onion rings or just the usual tosts/sandwiches.
