Potato recipe ideas?

I always buy potatoes every month. I simply love them. When i was pregnant they were the only thing i could eat that i wouldnt throw up lol.
I wanna try something new but i wuld like some ideas from my fellow mylotters ^-^
Recommended potato recipes anyone?
I wanna try my shot at some potato soup. ive had it once but i never looked into how to make it before.

Many years ago I used to make a potato side dish I loved. I forgot for some time but now I`m doing it fairly oftento acompany meat or chicken. I boil potatoes and cut then in round pieces. I place them in a greased pirex. THen I blend 2 eggs, milk, salt and pepper and pour over them. I top it with parmesan cheese and place it to bake at medium temperature. YUMMY!
