Perfect Cupcakes

Hello mylotters! I am into baking these days. So far, I was able to make a perfect cheesecake, carrot cake, oatmeal and chocolate chip cookies. But it seems I can never perfect my cupcake. I have made a chocolate cupcake last week. I made sure that I follow the instructions on how to make it but I cannot seem to perfect it. The cupcake is not moist and it seems it looks like a muffin. The top rises above the lining. Then when it got cold. It is kind a hard. What should I do? Am i doing something wrong?

Hey So ive never baked a cake in my life so i cant give any advice but i will say well done on trying it and from reading what you have baked so far it seems you definitely know what you're doing :) I think I will start baking sometime soon because...well I love cakes!! :) lol

Go to melindalee.com web site. She is a radio talk show about cooking out here in CA. She has lot of substitutions and changes for cookies for making them differnet...like if you want a crispy cookie or a more moist cookie, what to add, not add, or exchange. Like for a more moist cookie..add 1/4 more flour. I don't recall if she has anything about cupcakes as I haven't been to the site since cupcakes went viral...but check and maybe even ask her your question and she would respond. Good luck.

I bake and sometimes that happens to me.Maybe you're overcooking the cupcakes that's why it becomes hard after and if it looks like a muffin,maybe you're putting too much of the batter.Put less and it will not overflow over the lining.Hopefully this helps
