I get a pillsbury recipe sent to my email daily. I mean who doesnt like pillsbury and cant use a few recipes.
But today I was sent a recipe of mini upside down pineapple cakes.
I make a large pineapple upside down cake when I make mine. I use it for a breakfast cake with all the fruit on it.
But while I was on the main page of this recipe they chose it because today is
National Pineapple Upside Down Cake Day.
Seems we have a day for everything now. Wonder when they made that day for this?
I have had pineapple upside down cake for as long as I can remember.
mom always made it.

I used to make a lot of pineapple upside down cakes. They were easy and my ex liked them. I didn't know therewas a day for them though. There does seem to be a day devoted to everyone and everything!

I have made pineapples with my mom before, we usually used spongecake..it was delicious but after sometime you get overwhelmed..

Yeah, a day for everything and most of the time we dont' even know it until the day is over! I don't like Pineapple upside down cake, I don't like pineapple...but my husband does so I always baked him the cake from time to time...but it'd dry up before he could eat it all since it was just him eating it. So I found the idea to make them in cupcake pans...one pineapple ring per cupcake spot in the pan, get 12 cupcakes per pan! He could eat them one per sitting and I could halve the recipe and make just 12 instead of 24 like the box mix calls for or when I make my own batter from scratch, I halve the recipe. Works great and I have even tried freezing them, and it worked fine.!

I don't mind any national day that involves a sweet treat. Only the sweet treats are to be had less frequently than when I was a kid. I do really like pineapple on its own and so do the kids
