salted vegetables

There has been a long history for salted vegetables in China, about 3000 years. About 3000 years ago, the Chinese government began to tax the salt, for people can not live health without salt. Then people find that the salted vegetables did not to pay the slat tax, so they used that way to avoid the tax and kept their health. Furthermore, at ancient times, people can not have fresh vegetables in the winter, so they used salted vegetables instead. Now the tax for salt is not a big problems and we can have vegetable any time in a year, so the culture of salted vegetables seems gone. But today, I find that salted vegetables are quite delicious. The dish served in my college dining room is very great. The recipe is as follows; Material: salted green vegetable 200g; water bamboo 200g; meat 50g; Methods: 1.cut all the material into fillform ; 2. Then put some oil into the pan; 3. cook the meat first, after the meal is done, add the green vegetable and water bamboo. The dish is great with rice and can also be used to prepare soup.

Salted vegetables are good. Salt adds a lot of flavor to dishes. But I think because of all the packaged food we eat in today's society it is actually quite easy to overdose on sodium. There are other flavorful ingredients you can add to replace salt, such as pepper, white pepper, paprika, garlic powder, and curry powder.

well actually salt DOESN'T add flavor... it adds taste which is salty.... Taste and Flavor are not the same! they are totally different ...Taste is just one aspect (physical aspect) of your sense specifically your sense of taste (taste buds) sweet,salty,bitter,sour, and umami... while Flavor is a combination of Taste, Mouth feel(is it smooth?, grainy?, velvety?, etc.), and most importantly your sense of smell. The roast have an earthy taste, the risotto has a smooth buttery taste, the salad has a bright zing to it, the souffle has a velvety chocolate flavor...so its more of a mental perception rather than physical one. Try to pinch your nose and eat an icecream .... sure its sweet but do you sense any flavor to it? no... off course because you covered your nose.And it makes sense everything taste bad or bland when you have cold

Salt only give the salt taste for the salted vegetables, but when prepare the salted vegetables fermentation took place, that bring the vegetable some different flavor and makes them taste do special. Here in China, people in the east coast do not like add flavor into salted vegetables, while people in the west part prefer adding some pepper into it. In the Northern China, garlic is used as a flavor to prepare salted vegetables. In the past, different places have different flavor of salted vegetables and people consider that as local culture. But as now fresh vegetables can be bought, the culture seems go out of people's daily life.

Salted vegetables were very common 30 years, when there were on fridge and greenhouse tech. In that time, people can not have fresh vegetables in winter, so that in the autumn, they would use the salt to keep vegetables, so that they can have some vegetables in winter. Even greens were in yellow color after salted, they were seemed not so attractive as fresh vegetables. But in that time, people do not have other ways to keep vegetables in our region.

Salting is a very good preservation technique. Not only vegetables, fish and meat also can be salted. When you can't have fresh greens, salted greens is good enough.

Salting is a very useful way to keep food. So in ancient time, people use it to prepare food for the whole winter. When I was young, there is no fridge in home, and during winter time, fresh vegetables were very expensive. So my family have two big bowls for salted greens. At that time, I do not think salted vegetable was delicious, for I have to eat them day after day in the winter. Now as seldom having them, I find them quite delicious.
