Elderflowers

I'm making elderflower cordial this morning. the sun is out and the flowers smell astonishingly good. I've picked enough to make 5 litres of cordial so far, but I've enough buckets to make another 10 litres providing I can get enough extra lemons. Do you make elderflower cordial? Have you used elderflowers for anything else? I also make champagne, and use them for fritters. Sometimes I dry them for tea. Do you know if dried elderflowers can be used to make cordial? I haven't really got time to process them all at the moment, so it would be great if I could harvest them now whilst they're perfect then make the cordial later on.

The only thing I've ever done with elderflowers is make fritter them. They don't grow wild around here, so there isn't a great abundance of them. I planted one last year and it's growing this year, so I'm hoping to have at least a little. Probably leave them to make berries for the birds this year, though.

They grow like weeds around here, so I've enough to use the flowers and still have some left for fruit later in the year. Elderberries are great mixed with other fruit in jams, i don't like them so much alone. I've made cordial from the berries too, but noone in my house apart from me drinks it so I was intending to make loads more elderflower instead.

Some places do have them growing wild, but I couldn't be so lucky.

My goodness! how industrious you are - Bravo! I must confess, I've never heard of elderflowers. I have to go look them up now.

They grow like weeds here. The smell of the flowers epitomises summer for me, so making cordial or drying them for tea means I can enjoy them in winter too.
