Making Ratatouille

Today will be my first time making Ratatouille. I went back and forth between Ratatouille and Eggplant Parmsean (I don't have the cheese). have you made Ratatouille before? It's this a dish you like? Do you serve it with pasta? Is there anything you do to make it different?

My grandmother makes the best ratatouille! Normally she serves it without pasta or rice, just the vegetables with tomato sauce from the tomatoes she add to the vegetable mix! And it tasted really good! :)

If there had been any left overs (my husband hate 4 servings!) I was going to add some curry and tomato sauce to it and poach some eggs in it for a large bunch meal today.

Love ratatouille. My preferred way of serving it is with pasta--specifically, with farfalle. Ratatouille is a great summertime dish. It's quick, easy, and it takes advantage of the easy availability of all those fresh, beautiful veggies.

I don't know about quick lol Well could be how I prepared it. Took about a hour to cook. Considering how great it came out, I can't complain. I do enjoy cooking sometimes.

I've never had it before but it's something I'd like to try. The only reason I've ever heard of it and want to try it out was from the Disney movie Ratatouille lol

I think we have the movie and I have never seen it. I have 2 kids, but they are 10 years apart so there are many Disney movies that one was too old for/not interested in and the other wasn't around for or too young for. When my husband was taking Arabic classes in Monterey, that's one of the movies they watched in Arabic lol Anyways, you should try the dish. Right now everything you need should be super cheap since its in season. I was surprised, but it was really delicious.
