How do you marinade?

As in, what do you put in your marinade? and for how long do you personally marinade it? my parents used to use a mixture of apple juice, vinegar, and some different sauces for flavour, and they'd do the marinade the night before. I've heard of people mixing together the marinade and then freezing the meat in a bag with the marinade already in, so that the marinade would work as the meat thawed. We always forget about marinading, so our meat only gets marinaded for about an hour, but we plan on working on this because we've been buying cheap meat, so it needs more time and work. Last night we got some premarinaded meat on sale, and the thing is, it wasn't that great. it was still nice but not any nicer than what we'd been making ourselves. So I need some inspiration. What do you do in your home to prepare meat?

Marinading means just addind some flavours to the meat you are going to cook. What to add will depend on what you will do with the meat later on. don´t put too much salt on a meat if you are going to freeze it. In hact I omit it entirelly. After you thaw your meat (please don´t do it at the microwave oven but rather taking it out the day before), you can add salt, oil, pepper, spices and herbs (depending on the dish you will make. I love to rub on some garlic always. I buy a lot of cheap meat as I love to cook, but my budget won´t let me buy prime rib (nor will I want that for everything). But I own a wonderful pressure cooker that will cook my meat on minutes. The new pressure cookers are nothing to be afraid of, as they were in the time of our grannies. Marinating fish is something else. I put salt, pepper, garlic and oil and let it be for some time (not more that 30 minutes at the most). I save the juices to put over the dish if I steam it or bake it.

It depends on how much flavor you want to get into the meat and how much of the meat's flavor you want to retain. Soy sauce mixed with vinegar make a good and simple marinade and you can soak meat in it for 30 minutes. You can even cook the meat in it.
