Fish 'kinilao' is common and known in Asian countries and even foreign mouths enjoy this delicacy. Fresh fish meat cut into bite size then cleaned and washed with vinegar is a food delight which is second to none. Mixed with chopped union and poured with kalamansi juice. Then add last ingredient, a sprinkling of red pepper (optional). Now kinilao is ready to serve. nam! nam! It's truly okay and delicious to the palate. It goes well with rice, kamoteng kahoy (bilanghoy), bread, lumpak (sticky rice cooked with coco meat and wrapped in leaves), others. Have you eaten it? Do you like it? Is it a health food? Well, yes it is healthy, but since you are not cooking your kinilaw with fire and you are only relying to the acid of vinegar to cook the food you really have to be clean in preparing the ingredients. You have to wash your ingredients thoroughly. I actually got amoebiasis by eating kilawing milk fish. I was not the one who prepared it. We were having a drinking session near the beach and it was actually one of our pulutans. I notices that they prepared the milk fish near a toilet facility and they used the water inside the comfort room to wash the fish. I was too drunk to complain. I ate it and then after three days I puked and I had an explosive diarrhea. I was hospitalized for one week because of that and then i said to my self never again will I eat kilawin if I am not the one preparing it.

00Bleeding...I'm truly sorry for your contracting diarrhea through kinilao. Yes I agree with you 100% that it must be cleaned and prepared well. And I'm thankful that you're not totally going to say goodbye to eating kilawin. It's not to blame for unhappy episodes met regarding it but ourselves for our carelessness. Wish you and all there in Kalibo good day and long life.

I have never tried this kind of kinilao, although I eat my moms kinilao na labanos (this one is cooked with pork and liver in vinegar). Reason being is, I am not fond of eating raw meat or fish. I don't even eat sushi or sashimi. I know some really good kinilao doesn't smell fishy or taste fishy at all, plus if the fish is fresh it is very tasty. I was also told this is healthy because all the goodness and nutrients of the fresh fish isn't lost because it wasn't exposed to heat. But still, I don't think I'll be eating some anytime soon.

Thanks that you have now the correct concept that kinilao is a truly health food the fact that 100% of its nutrients are still intact. Hope you can convince others as well as yourself to try this palatable and incomparable Filipino food.
