Rhubarb, Rhubarb..And Even More Rhubarb!

I'm inundated with the stuff. About a month ago hubby came back from his Mum's armed with a bag of plums (since eaten) plus some mega sticks of rhubarb, all of which had been grown in his Dad's garden. Now, don't get me wrong, I'm grateful..well, sort of. At the time I chopped the rhubarb up into manageable pieces and they have been in a bag in the freezer ever since. I really need to do something with them. But I can't be bothered. A crumble would be awesome as I've used other fruits in crumbles so I know they're easy to make. I dunno..maybe it's 'cos they're from the in-laws that I can't be bothered doing anything with it. They also gave John a mound of newspapers for the cat litter tray (we have litter as well) but they've given us the crappy advertising 'bits' as well..you know, the shiny blurb you get in the newspapers. I'm not happy about this as we'll be doing THEIR recycling for them. Damn cheek. So that's why I'm digging my heels in over the rhubarb. Anyone care for a stick..or 500? Haha!

I can't help you with your gratitude challenge, but I recently read about juicing rhubarb and using the juice in various things like breakfast smoothies or making pancake syrup with it. It's said to calm the tummy, so it might come in useful. Maybe you could thaw the rhubarb and just press the juice out and toss the rest? It might be good made into syrup and used for ice cream or pudding sauce.

But that would mean getting my blender/juicer combi out that is currently stored upstairs..it does sound yummy though..and highly unusual. Wouldn't rhubarb juice have a bitter taste to it? Another tip for you that I came across on a jam jar of all things. Measure a couple of tablespoons of raspberry jam into boiling water. Stir, and you get a sauce for vanilla ice-cream! Not done it yet..but I shall eventually!

@Janey - I have figs growing in my garden - not the best variety anyway. I read on the Net about the method to dry them. It is no doubt a boring process The process produced a lot of syrup and fig syrup has such a lovely flavour. Ice cream tastes lovely with a spoon or two of this syrup.

Rhubarb.... my Granny used to cook a mean rhubarb fool when I was a girl, it was really thick and you could hear the spoon slurping when you put the spoon it in to dish it up. I bet it was full of millions of added calories we had never heard of back then!!! Stew it and put it in the freezer for crumles/pies etc. Make some chubtney and jams and sell it!!

I have a lot but not enough to sell I don't think. There are so many uses for rhubarb, it's amazing. I'm growing rather fond of it..well, sort of. Tomorrow I shall take it out of the freezer to defrost, then I shall HAVE to do something with it.

Ah... in-laws... The one way I find rhubarb to be fantastic is in cake. I've prepared it in other ways, and the results were not desirable. I say drag some of it out and prepare a nice cake. Top with fresh whipped cream. Enjoy, and try not to think too much about your rather cheeky in-laws.

They're the furthest from my mind, believe me. Rhubarb cake, eh? How interesting. I might give that a try, thanks.

I think you should use that Rhubarb especially if you have had practice making a crumble,a rhubarb crumble is absolutely delicious.I used to love having a rhubarb crumble made with the rhubarb from my grandmothers garden.Though if you have got that much rhubarb you'll probably get bored of crumble after a while and unfortunately I haven't got any other suggestions of what to do with it maybe a pie.I would imagine if it goes into a crumble it would go into a pie.

Now, now that's called ingratitude! Think positive Janey and in minutes you will come out with a huge list of plus points in this transaction. I call it transaction simply because you were helping your in-laws with their recycling! Good deeds. Think about it!. How do you use Rhubarbs? Do you eat them raw? We do not have them here in India. We have something similar belonging to the caladium category. The leaves, the stems and even the bulbs are cooked in various ways.

Mmm, I'm sure I will come up with something. It's a bit over-facing at the moment (as the in-laws always go over the top with such 'gifts' as John never says 'no' to them) but when I do make something I shall take a photograph and post it on here as proof that I've used it all up lol.

I am surprised that over there you grow rhubarb and eat them. Here it is a kind of Traditional Chinese medicine, whose root is used as purgative prescription.Maybe they two are not the same kind.

I rather like rhubarb, especially in a crumble as you suggested. Nevertheless it is not very often that I buy any because despite being great on infrequent occasions, it would be rather too much to eat it on a regular basis. A very large quantity of rhubarb would definitely be a problem for me. I would enjoy the first quantity that I used, then have the balance for so long that it would eventually be disposed of.
