I watched a documentary about our local cuisine on TV and in the segment about adobo, This this is not originally called adobo but its the spaniards called it adobado cos it has similarities with a certain dish of theirs, this had been our dish even before the Spaniards came. More looking back to the history. The original adobo recipe dont have soy sauce sauce on it. Ancient Filipinos uses salt, vinegar and pepper only on their adobo. But when some Chinese and Japanese traders came here,They introduced soy sauce( Yes our ancestor have contacts with the Japanese even before the Spanish colonization)
if you think of it, Our local soy sauce have more similarity with Japanese soy sauce than the Chinese soy sauce.
Then when the Spaniards came, that's when Filipinos started adding potatoes and bay leaf on their adobo and its original name becomes obsolete and everyone started calling it adobo.
Right now most families in the Philippines have their own version of adobo.

Very nice info about the history of this dish. I have tasted differnt varieties of this dish and so far they all taste good and there is this similar taste that this dish has but with the different versions we have all over it is still quite tasty dish to enjoy eating.

the worst moment of my childhood is when my uncle who's favorite dish is fish adobo and his faily have a vacation on my family's house. My parents spoiled the for a week. fish adobo,,,,for a week....

I dont like adobo when its sued for fish....
I think it works the best with Pork or chicken the most,
I tried it with frogs and rabbits and tofu and it also works but I dont like this recipe for fish.

Hmmm, now I know! Yes, in my family alone, we all have different versions of adobo. Mine is almost dry, with just a hint of the sauce plus I fry the meat first just to let its juices out and to make the outside a bit crispy. I also don't put potatoes or bay leaf. My grandma on the other hand cooks her adobo using beef and with coconut milk.

my family sues the simmer method since pork and chicken already have fat of their own and its still crispy. i dont like the sweet variety with sugar, some families wants their adobo to have caramel so they sugar.
I like the hawaiian variety though.
