I made sloppy joes from lentils

I made sloppy joes from lentils yesterday and they were delicious. It was about two years ago, that I did some research and discovered that a vegan lifestyle was right for me and the kids. Since then I have discovered some new recipes, some of them keepers and some of them not. My 13 year old daughter loves sloppy joes, so I have to find a recipe where she could still get all the benefits of a healthy and nutritious lifestyle, but also enjoy her beloved sloppy joes.
I found this recipe that works perfectly and the lentils are a great substitute for hamburger. Oh my gosh, it is so good and the kids really enjoy it! What have you made with lentils?
Having sloppy joes always reminds me of the movie "It Takes Two" with Mary Kate and Ashley Olsen. We sure do love our "messy burgers!"

I would love to get a hold of this recipe. I am making the switch to a heart healthy diet and want to eat a more plant based diet. I have been vegetarian before, but not really considered a vegan lifestyle until lately.. still thinking about it! I only eat cheese and eggs but am considering tossing both of these out the window! I like fish as far as meat goes but sometimes a good sloppy joe would be good.. but I don't do red meat at all.. where'd you get the recipe?

Sounds pretty good, I am going to have to look up how to make my own sloppy joe sauce. I don't know how to do that and don't have any on hand. I'm going to try it though for sure!

So I found a simple recipe online for making my own sloppy joe sauce and tried it with lentils. Just wanted you to know I loved it!
I just didn't cook quite enough lentils since it was my first time, but I can fix that next time it was very good, thanks for the idea!!

We are ovo vegetarians which means we eat eggs. Now, we have had cheese maybe once every other week. The kids will eat cheese much more often than what I do.
I was completely vegan for almost seven months, but then added eggs back in.
The recipe for this is boil 1 cup of lentils in four cups of water. I added chopped onions to mine. When the lentils are cooked (usually 20 mins) drain them and then add 1 TBS brown sugar. Add your Sloppy joe sauce. You can either make your own or buy it.
The kids LOVE this! I meant to upload a picture of the final product, but maybe next time. It really does taste great.

I've used boca burger or, more recently, tempeh in sloppy joes. However, I had never thought to try using lentils in the dish. Hmm... Going to have to try that.
Lentils are one of the foods that I like to keep on hand. Unfortunately, I think that I actually don't have any on hand right now.
I do, however, have my split peas and dried beans in the pantry, though.
I'm thinking that split peas might work as well. I know that people make split pea burgers (I've yet to do that), so it seems an obvious extension to carry that on to using split peas in sloppy joes.

We've used boca burgers too and they do taste good. I wanted to get away from the processed soy because it wasn't as good for me as I thought it was, so I've been on a mission to find foods that will give me the flavor but still have all the health benefits.
I have almost all dried beans on hand right now, they are quickly becoming a health food staple in the pantry. We have split peas, white navy beans, lentils, quinoa, red beans and rice. These are foods that will never go bad before we get to them. I almost used split peas yesterday instead of the lentils and I am sure they would work just fine.

We've moved away from the more processed soy foods for the most part, too. There are a few exceptions, but I like going with whole foods in my cooking most of the time.
Love quinoa. I need to get some more; the bit of quinoa we'd had on hand was dinner the other day.

sounds yummy to me, can I get the recipe for that? how are you today? Hope you are having a merry xmas there. Im alittle tired. Worked most of the night here. But it was well worth it so far. merry xmas my dear friend...
