What can I do with this pumpkin?

I have some leftover pumpkin, it's about 4 - 6 spoon fulls of it which I had leftover from the muffins I made. I really can't think of how I can use them, without having to buy more.

Hi Ricki, you can do a delicious pottage or soup, you can add the smashed pumpkin on 2 cups of milk, add salt and condiments and boil a bit. Yumm! Bon apetite! Bleessings 911Ricki... dainy

Maybe you can throw it into the blender with some fruit to make a smoothie? I know my daughter does the strangest things with fruit and vegies to make smoothies and they come out great.

There you go...you might just make up your own really delicious smoothie and hopefully you can sort of share it with us. I'm sure we're all wondering what it will turn out like if you decide to do this. I know I will. I just bought a blender to make some of these so I'd be curious.

Just mix some brown sugar and butter in it, nuke it, and pretend it's squash.

I would mix it into some pancake batter with some spices and make pumpkin pancakes. I have made them for my kids before and they loved them. The amount of pumpkin you have should be just enough to make a plate of pancakes for yourself some morning. Or heck, for dinner! They are a little heavier than regular pancakes, but they taste awesome.

The easiest thing to do with it would be to transform it into soup. You could do a pumpkin curry soup or a coconut pumpkin soup if you have the right ingredients on hand. Or you could use it to make pumpkin bread. Maybe a nice pumpkin raisin bread?

Ricki, How about pumpkin cupcakes with cream cheese filling in the middle? My mom made them on Christmas. They were delicious!

This recipe calls for 1 cup of pumpkin, but you could try adjusting it some. I love pumpkin mac & cheese so much. I plan on making some tomorrow because I also have some leftover pumpkin from some cookies I made. http://www.inspiredtaste.net/9038/pumpkin-mac-and-cheese-recipe
