Beets

I love growing beets. They have iron and vitamins A and C, you can eat either the root or the greens and both freeze well enough. Beet greens are lovely in the garden and can be eaten raw or cooked. They tolerate nearly any kind of soil, so they're easy to raise. Beets need some shade and good drainage. About the only thing to remember about planting beet seeds is that they need to soak at least half a day before planting. Beets come in dark red, yellow and pink, so there are plenty of choices for your garden.

I never knew you could eat beets raw pr that they come in yellow. I do like to eat beets but i eat only the canned or jarred ones. I have also never planted beets but i might try this spring. I did know they were high in vitamins but not what vitamins. thanks for this very interesting conversation and facts.

Hey red, thanks for joining in the discussion on beets. I've only grown Detroit Dark Red beets so far. The gorgeous green of the beet leaves contrasting against the deep dark red stems is a sight to behold. And they taste every bit as good as they look. Unfortunately, I lost mine to overcrowding and water issues.

Thanks, red, you are so sweet to help me by responding to the beets discussion. For more gardening information, I usually consult Rodale's Organic Gardening Encyclopedia, Mother Earth News (MEN) magazine and the Old Farmer's Almanac. All three publications have been around for quite awhile and have great ideas.

Could i look any of these up on the internet because i don't know where to go to get them and i have very little money being out of work right now. My hubby is the only one working. So how can i do any of this on a budget?

When you talk about beets, I wonder if they are the same thing as beetroots which we call them, they certainly sound the same in colour. Although I didn't realize they came in yellow. Ours are mainly purple in colour, and are boiled to be eaten, I have never tasted a raw one to be honest. You are right they are easy to grow.

Beetroot is the bottom part of the beet. The top is the greens.
