Fresh ingredients, proper seasoning, proper cooking time -- that's all you need. Try to go with something that's fresh. Stay away from the frozen stuff, boxed stuff, canned stuff, etc, and aim for fresh aromatic veggies, lean meats, and stuff of that sort. Make sure to season your food. Think of every dish like a layer dish. For instance, if you're making a stew or something, start off by creating a well seasoned stock. Then when you simmer your vegetables, season them. When you brown the meat, season it. When you incorporate all the ingredients together, season it. A simple chicken cooked to the right temperate with mere salt and pepper comes out tender and juicy and succulent and finger-licking good! Everything else is an add-on; it's another layer. The same holds true for whatever you're cooking. Make sure it's fresh, make sure it's seasoned well, and make sure you don't overcook it.

Ariannet, chicken is done once it's not red inside anymore. If you're not sure don't be afraid to make a cut into it and see if you see any blood. If there's no blood then it's done.

I love cooking too! In fact, I am passionate about it that whenever I try out a new recipe, if I needed to experiment on substituting ingredients, or adding to or subtracting from the original recipe, I make sure it will come out as delicious as the original recipe. Cooking doesn't have to love you because it doesn't have feelings..haha! You just need to love doing it, and you just need to consider your family. Salt makes any dish tasteful. But I don't rely too much on salt because I and my husband are maintaining a normal blood pressure level. Instead, I use spices and other stuff to add taste to my food. Just enjoy cooking!

Ditto on the spices. Spices and olive oil can add flavor to just about anything. One of my favorite easy dishes is any kind of beans with tumeric, garlic powder, onion powder, olive oil and a little salt. Very tasty! This same combo of seasoning works well with greens like kale too.

Recipes were made sort of a guide to jot down the ingredients and techniques of how to cook food, right? So it was made by such cooking experts based on what they have gone through with those. The taste can be spiced up, sweetened, unsweetened, or whatever taste you want depending on how you deviate from the recipe itself, lol! Try using some pre-made sauce or premix recipes or adding exotic spices or whatever. i've been using oyster sauce mostly to my dishes and it works wonders, try it.
