Carrot cake help

Hi! I'm trying a carrot cake recipe that is new to me and it came out a bit bland. Are carrot cakes normally this way? Here is the recipe I used; www.cooking.com Take 5 carrot cupcakes and the description starts with Chef Bryan Vietmeier. I'm not sure if I put in enough carrots and that may be the only mistake I made but if there is something else that would help bring out the flavor, let me know! I'd like to use these for the NoKidHungry.com late this month/early next so time is somewhat of the essence.

If you have followed recipe to the letter then that is how it is to be if you are not happy with the taste you can and vanilla to give a better flavor

Hi! I did follow the recipe to the letter as it is my habit to do so I think I will add more carrot the next time I do so. I did try lemon buttercream using fresh lemon and it really helped to give it a little zing. Thanks for the imput. Let me know if you have some other ideas. Are you going to participate in this bake sale too?

no I just do baking for myself I bake and cook foods from around the world one of the things you can do is check out other cooking sites and check out what they have for carrot cakes
