I make either sandwichs or omelettes when I`m alone for lunch and want to be mylotting. It is easy and yummy. I had some frozen artichokes in my freezer and literally fell over my head yesterday when I went to get some ice cubes. I thought they wanted to be cooked so I left them to thaw. And today I made an incredible omelette with 2 eggs, salt, cooked artichoke meat and some diced cheese. Yummy! which are your favorite ideas for quick meals? Share!

I live alone so I don't often cook a real meal. I have a few simple favorite "light meals" or quick things I throw together. One of my favorite things is pimento cheese. I like it on sliced french bread. I always spread the bread with mayonaise first. I like the fresh loaves that are still crusty on the outside and very soft inside. I love omelettes also but some times I get lazy and don't want to do a real omelette so I do a scrambled omelette. I just throw some cheese and ham or bacon along with a little onion in my scrambled eggs, same taste just all thrown together. I love green olives and I will just open up the jar and litterally stand at the counter and eat a couple dozen of them at a time. I love the taste and it also takes care of the hunger for a while. Sometimes that is all I will eat all day until I fix a light supper in the evening. One of my favorite light meals is hot wings with buttered crunchy french bread spread with real butter along with a bowl of green olives. I guess I really have a boring eating habit.

Yes, that's one of the perks of being the cook... you get to fix what YOU like. When I still had a family at home to cook for we did indeed have what I liked.

Easy fix meals for me would also be omelette with crab meat and lots of tomatoes. My kids love it. They can eat it with bread or rice. Also, pancakes with slices of fruits. That is another favorite of my kids.

I think omelet is one thing that can be made quickly. I also like to have tomatoes and other fruits when I am hungry.

I like cheese ,bacon, tomato and peas.Lovely a whole meal with plenty of goodness.Have some brown bread and there you have a balanced meal that will fill you up till the evening time.I love omelettes as well. You can put anything in them ham, curry powder, chilli. They are better than a sandwich although you can put some really nice filling in them as well.Egg and cress mayo are one of my favourite filling.Srambled eggs with cheese and mushrooms are one of my favourites as well.Omelettes and sandwiches can be just how you want them everyone can have what they want in them.Put a bit of salad with it as well. You have made me hungry

If I have the family here, I may use 4 or 5 eggs and anything else around but do not fold the omelette. The cheese is added last and then I put it to broil in the oven under the broiler until the cheese melts and the size of the omelette increases as it sort of puffs up. You probaly know this anyway. I think it is called a Spanish omelette. I add veggies, anything on hand really. Have even added grated carrots

Eggs can be cooked in many varieties of recipe. It can be mixed as soup ingredients, made omelette, can be boiled as hard boiled eggs, sunny side egg, and can be used as ingredients of cake. For quick and easy also healthy I usually mix egg inside the soup, it will be an easy and delicious also warm meal. Or just make omelette or sunny side egg, mix with garlic. Usuallu I don’t use ham or anything processed for it.

I also think it is good to have quick meals when one is busy. I like dosa and masala dosa is my favorite. I eat buns and sometimes bread and butter or jam as a quick meal. I think omelettes and sandwiches can be made quickly and can be good quick meals.

Actually, I just had an open-faced egg sandwich for lunch--half of a bagel, cream cheese, chocolate chili and an egg just past being able to be called "sunny side up." It was quite good, but I'm starting to think that perhaps another such sandwich is in order.

i laughed when you make it seem like the artichokes were calling your attention. when my sister doesn't like what's on the table she cooks her own meals. she did an omelette few days ago to use up the four remaining eggs (2 white, 2 brown) and the leftover cheddar cheese, then added button mushrooms, tomatoes, i forget what else. but i will always remember that the cheese really makes a big difference!

I like the japanese omelette called omurice. I don't know why it is special when basically it is omelette.
