What's a good snacky food to eat, even in bulk?

My husband is a truck driver, and he can't always heat the best types of foods for him when he's out on the road. There's not always the money for him to eat out, even when he's able to get to a place. Sometimes, even if he can get to a place, the foods aren't the best for him to eat. He needs a food that can be kept in his truck, that would have a long shelf-life, plus be good for him, no matter how much of it he eats. I know he could get a bunch of things like carrots and celery, but that's not a sustainable food, and they would probably get old after a time. It can get frustrating at times. Does anyone have any ideas on this one? I know that anything that would be suggested would be helpful to him and me. We all need help in this.

Before I retired I often had no time for lunch, a banana filled the gap and gave energy.

I can't imagine a banana would sustain someone for 12-14 hour driving times.

Trail mix, nuts, salted or unsalted, jerky, peanut butter and bread for sandwiches. Those are to name a few. If he carried a cooler and was able to stop at a Walmart once a week or so I think he could also carry other fruits and veggies such as carrots, grapes, pears, apples, celery. Bananas would also be a good thing to carry. My Daddy drove a truck most of his adult life and he always stopped at truck stops and ate. That was so expensive and very bad for his health. Prepare him sandwiches which he could munch on anytime. Then have him bring a loaf of bread and maybe cook him something that he could eat with the bread. If he has a big space on his truck to fit a cooler, maybe a prepared salad would be good as well. Just make sure that there would be a lot of ice. And of course, let him bring fruits.
